A bold and brooding Shiraz from the red earth of Heathcote.
Tasting Notes
This cool-climate Shiraz is all dark fruit and spice — think plum, mulberry and black cherry on the nose, with layers of blackberry, blood plum, blueberry and a hit of white pepper on the palate. French oak brings lift and structure, while the tannins finish smooth and elegant.
Vineyard & Winemaking
Sourced from premium vines growing in Heathcote’s famed Cambrian soils — over 100 million years old and perfect for producing deep, flavour-packed Shiraz. Low cropping and optimal ripening set the foundation for a wine of serious intensity. Fermented on skins for 9 days before resting in French oak for 9 months, this is a wine shaped by both soil and craftsmanship.
Food Pairing
Big flavours call for bold pairings. Think slow-cooked lamb shoulder, a juicy ribeye, or chargrilled eggplant with tahini and herbs.
How to Serve
Serve at 16–18°C to bring out its full depth and complexity. Decant if you’ve got the time, you'll be rewarded with a bit more oomph in the glass.
